Chocolate Nativity Crib mold

Realizing a chocolate Christmas Crib is easy.

With a pastry bag fill the Christmas Crib food silicone mold with milk chocolate and the Star of Bethlehem with white chocolate.   

Pay attention to filling carefully all the mold, also the side edges, then knock lightly the mold in order to let the possible air bubble going out.  

When the chocolate is well crystallized, remove carefully the pieces of the Christmas Crib, from one side to the other of the mold to avoid breaks.

To build the Christmas Crib put some pre-crystallized chocolate over the points of junction and stick the Star of Bethlehem.

The spray ice can help to speed up crystallization times.

The Christmas Crib can be used to create a stylized representation to embellish shop windows or as a topper for cakes and stuffed Panettone.
